Main Steps in Parboiling:
Soaking:
Paddy is soaked in water at controlled temperature for a specific duration. This allows moisture to penetrate the grain and initiates starch gelatinization.
Steaming:
The soaked paddy is then steamed under controlled pressure. This step completes the gelatinization process, strengthens the grain structure, and helps seal internal cracks.
Drying (Final Step):
After steaming, the paddy is dried to reduce moisture content to a level suitable for milling. Proper drying is critical to maintain grain quality and avoid breakage during milling.
Types of Parboiling
Single Stage Parboiling:
In this method, soaking and steaming are carried out in a single cycle. The paddy is soaked to achieve the required moisture level and then directly steamed. This process is simple, cost-effective, and suitable for standard quality rice production.
Double Stage Parboiling:
In this method, the process involves two cycles of soaking and/or steaming. The paddy undergoes an initial soaking and steaming, followed by a second stage to ensure deeper starch gelatinization and uniform moisture distribution. This results in stronger grains, better milling yield, and improved rice quality.
